How to Use This Calculator
- Enter the amount of yeast in grams (1 standard packet = 7g instant, 8g active dry).
- Select the From yeast type you have.
- Select the To type you need.
- The calculator shows the equivalent amount using standard conversion ratios.
Formula
Instant → Active Dry: ÷ 0.75
Active Dry → Instant: × 0.75
Instant → Fresh: ÷ 0.32
Fresh → Instant: × 0.32
Example
Recipe calls for 10g active dry yeast: 10 × 0.75 = 7.5g instant yeast. Or 10 ÷ 0.32 = 31.25g fresh yeast.
Frequently Asked Questions
- Multiply active dry yeast by 0.75 to get instant yeast. If a recipe calls for 8g active dry, use 6g instant.
- Yes — fresh yeast is about 3x the weight of instant. If a recipe calls for 7g instant, use about 22g fresh yeast.
- As a general guide, replace 1 packet (7g) instant yeast with about 227g (8oz) of active sourdough starter, reducing flour and water in the recipe by 113g each.
- Yes — yeast is most active between 75–85°F. Below 65°F fermentation slows significantly; above 95°F yeast can die. Adjust quantity or ferment time for your kitchen temperature.
